It’s time to bake. It’s a Saturday and I am going out to a BBQ tonight to a Brazilian friend’s house. I thought this would be a great opportunity to make a cake, then we don’t have to try to eat it!!! Haha. One of the difficult things about all this baking, what to do with it! I mean, my family is pretty good at eating sweet treats, but not that good.
So I decide on Coffee & Walnut Praline Cake. Looks amazing, coffee, what a great after dinner treat and praline, who can beat it. I make the lovely sponge mixture, which needs to be made in three separate equal size tins. I have one. Do I go up to the shops or cook it three times. Its only 12-15 minutes per bake, so I choose three times in one tin.

The praline is amazing, almost caught as I talk to my daughter and try to read the recipe at the same time, not something I would highly recommend with sugar melting and cooking on high heat. I read too late you need to start it on a low heat, but I managed to save it, grabbed it off the heat as it was burning and all good, tipped onto greased baking paper like a pro. Wow, just like I’m watching master chef. Then the assembly with coffee butter cream and covered in crumbed praline.

I tell you, it was a delight. The guests praised and applauded the cake, the flavour, the texture of the praline, “I want the recipe”.I received full acknowledgment of the joy of making people happy from really good food.
