Its been a long weekend, Easter and I kind of lost track of the date, somehow.  So Tuesday has arrived and it is the 3rd March and no bakes have been had yet this month.  So with Daylight saving finished, I got up at what I thought was 8.30.  Quite late, but the kids are on holiday today, so we are having a sleep in anyway.  I got started on the Ginger shortbread the recipe of which has been eyeing me up all weekend from the bench.

So I mixed and combined and chopped, using my new measuring spoons for good measure!  I was a bit concerned about putting so much fresh chopped ginger in as it might turn out too spicy but i followed the recipe regardless.  Just as well, because after it was baked, we tried it and you know what, I can’t remember putting the powdered ginger in at all.  Luckily its kind of gingery enough though, just.  What a shame, could have been better.

 

 

It was an interesting mix, as it came out really dry,

but you pressed it into the tin, and voila.  Then you sprinkled more crumb mix over the top.    It came out soft, like a cake but firm like a biscuit that held together when baked.  Amazing.  The science of putting enough butter in your mix, it works wonders.

The house is being destroyed this morning.  My daughter’s wardrobe which comes into our room is going.  As the shortbread was baking, I thought I’d better check on her, without waking her, though how she could still be asleep through that racket I didn’t know.

As the mother of a Type 1 Diabetic, its your biggest fear, that your child could go into a diabetic coma overnight from having low blood sugar.  I often check on them during the night.  Both my daughters have Type I Diabetes.  It involves high management, doing up to 5-10 blood tests during the day and night, and balancing insulin levels with carbohydrate and exercise.  We do have insulin pumps which helps.  Stressful though.  Anyway, I peeked into her room at 9 am and she was sleeping like a baby, breath out, relief.

So back to the bake and I looked at my watch, it said 9.30am, but the clock on the wall said 8.30.  I called out to my husband that he had put the clock back twice, hence 2 hours instead of one.  He said, no, it’s 8.30!!  Oh dear, so I must have gotten up at 7.30!!  This daylight saving really plays with your mind!!  So had a not very gingery piece of ginger shortbread for breakfast. Still very yum though. 🙂
