My version of Anzac biscuits 🙂 

It’s Anzac Day, Wednesday the 25th April and I noticed that these biscuits resembled our own Anzac biscuits so thought I would cook these.  My daughter is deputy head girl of her college, so will be giving a speech this morning at the local war memorial commemoration.  It’s an important event, a memorial in memory of all those that fought and died.  With a Grandfather that fought in the war as well as my husband’s Grandfather who fought at Passchendaele, it’s an important time of remembrance and gratitude.  And as the speeches on the day reiterated, we wear out poppies, not in mourning but as a sign of respect and gratitude because none of our possibilities would be now possible if it wasn’t for the sacrifices that these men and women made.

We stood in the service, singing Eternal Father Strong to Save, (although they had run out of leaflets so we had to stand on tiptoes and peer over the shoulder of the gentleman in front to read to words!). We listened to the Last Post as the flag was lowered by a member of the Auckland Squadron Air Training Corps, sang the National Anthem and recited The Ode of Remembrance (from Laurence Binyon’s poem “For the Fallen”)

“They shall grow not old, as we that are left grow old. Age shall not weary them, nor the years condemn. At the going down of the sun and in the morning, We will remember them. 

Afterwards, we had a photo with the Prime Minister, Jacinda Ardern, an Anzac biscuit and a chat amongst ourselves.  It was a poignant time of togetherness and remembrance for all ages.  I was struck by the innocence and youth of a group of boys dressed in military uniforms eating Anzac biscuits after the ceremony.  How cruel war was that it could steal the youth of our countries to die on foreign fields or to come back and be changed forever.

The biscuits turned out a treat, full of cinnamon, oats and nuts, brown muscovado sugar and honey, another favourite with the family.  They might even become a regular occurrence in our biscuit tin because
