It’s the end of the school holidays and I haven’t got much in the cupboards for school lunches.  I spotted these Drop Scones and given that it’s Sunday and I need a simple bake, I thought these would be great.  In fact, they resemble my pikelet recipe (see my recipes). I have been flat out baking like crazy and its not leaving me enough time to write!!! Haha.  So I am now doing this bake off over 13 months, there’s my bakers dozen 🙂

I followed the instructions for the drop scones,which was pretty much the same as my recipe, using bicarbonate of soda, cream of tartar, sugar, egg and milk.  The only difference was the addition of lemon zest, (I used Lime) and maple syrup.

This type of recipe is great, as you can whip it up in an instant, cook it and eat it, hot, with cream and jam or maple syrup or whatever you fancy at the time, even with banana and berries, or tinned peaches, Yum.  I was astounded however at how soft, delicate and lush this mixture was compared to mine…how?  I don’t know.  Same(ish) ingredients.  Wow, light, fluffy and to die for.  I tell you what, there were only three left on the plate by the time school lunches came around the next day!  The family dipped into this one, and that full plate of maple and lime drop scones sitting minding their own business on the bench, was gone in the course of the afternoon!!

I went to Uni the next day to my poetry critique group.  As I walked up the steps to the AUT tower, I was overcome with a sense of gratitude to the institutions that we have frequented in our lives.  My time at AUT is a delight, my writing course at MIT was like going home, my Botany degree when I left school fascinating, and any course I have ever taken and still plan to take, from sewing courses and French to mosaics and Thai cooking classes.  We are faced with endless opportunities to do what we want, and to learn and improve ourselves and our lives.  Lucky!
