Well these looked easy and a nice fun bake for Saturday afternoon. Actually it was practically evening by the time I made them so we had them for pudding, after our roast (bought from the local roast shop I have to admit, because I was too busy baking to cook dinner!! of course). And anyway, I like a break from cooking meals on the weekend.
Last night I had had the most amazing roast pork at a buffet at the Holiday Inn, so that is what had inspired my desire for roast pork with apple sauce tonight. I had been at the Huntington’s Disease Conference, as my dance group were doing a performance there, for the families and doctors of those affected by this tragic disease. With a 50% chance that children of Huntington’s Disease patients will also contract the disease, it is the whole family that is affected and need a lot of support. Little can we understand what a person must be going through seeing a loved one suffer, let alone knowing that it could be their fate. Our hearts go out to them. Live life to the full, and enjoy the moment are understatements here.
With the sun setting already, and my husband off to buy the roasts, I melted the dark chocolate over hot water, put the other ingredients into my cake mixer and whipped them up, soft butter, Muscovado sugar, ginger syrup and four eggs. Then I chopped up an amount of root ginger, (about 80g!)which I thought would be quite stringent in the cake, but follow the recipe I did regardless. Then the melted chocolate was folded through the thin batter mixture and voila into the ramekins. When I saw that the recipe said “bake for 13 minutes, until the top feels firm – the middles will be soft,” the penny dropped, these were fondants!!
So I left them on the bench while we tucked into our roast dinner and baked them afterwards, turned them out individually and they certainly lived up to our expectations, they were runny in the middle alright! The small lumps of root ginger added a chewy consistency that was surprising and interesting to eat along with the runny chocolate and light as air sponge mixture. Delicious with cream, all gone!! Lucky for me my dance performance was last night!
