I took my daughter to the hospital the other day for her three monthly checkup.  She has an auto immune disease, (another one that is, aside from diabetes) which requires regular hospital visits.  We went to her specialists and then had a coffee and a hot chocolate. “Don’t get the plastic lids,” she said, and as she is very staunch regarding the environment, I complied, of course.  So I took away my takeaway soy latte in a paper cup, paid at the vending machine for parking, walked to the car and drove her to school, all without a lid!

And to boot, the coffee was better, I could see it, appreciate the foam, and help the environment.  That same day I went to my local Istanbul restaurant to get some pita bread with spinach and cheese to take home, and as I chatted about the changeable weather in Auckland at the moment to the staff, the pizza oven guy serving me said, “This is life, beautiful with difference.”  And I guess, he’s right and so was my daughter.

Trying something new for the right reasons can reveal unexpected and positive consequences.  I did the same again when I was selling my products at the market the following day, ‘soy latte without a lid, extra hot’, a longer order,but it worked,

especially with the Mocha cheesecake from Otti &Olli to go with it!

My cotton bags that I sell to “say No to plastic bags” suffice to make a difference too.

So when I got home from the hospital, I had an hour until I had to drive into town to my critique group, so thought I could bake these meringues and take them along.  I looked at the egg whites and white chocolate, then read the recipe…I could do this in one hour.  Then checked out the cooking time, 3 hours,  then cool in the oven…ahhhh, no, it’s not going to work.  So when I got home at 3, I hit it,  whipped the eggs whites, added the castor sugar and icing sugar, then spooned them into little meringues on a tray.  I put them in the oven at 120 degrees C and had them cooked by 6.40pm. 

Going back for more! 🙂

That night I dipped them in whipped cream and grated white chocolate on them.  My husbands and my reaction on taking a bite was unprintable!!

After he had eaten two in a row, we were chatting, and he didn’t seem to be focused.  I said, “Are you alright?” He said, “No I’m just thinking if I can get away with another one, I can’t really concentrate at the moment.” 

They were that good!!!!!!!
