I love having Bliss Balls in the fridge.  You feel like a naughty snack and bingo, there you have one.  They taste delicious but they are NOT naughty, just yum.  The last batch I made were so moist and full of yum it was like eating uncooked biscuit mixture.  The best!!!

So I add  a packet of dates to a pot and cover the dried fruit in hot water.  I bring to the boil and simmer for about 5-10 minutes.  Add more water if necessary to keep the mixture thick and creamy.  You can also add chopped apricots or figs. 

When the fruit is all breaking apart, you can stop simmering. Then add about

  • a cup of rolled oats
  • a cup of desiccated coconut
  • chopped nuts e.g sunflower seeds, pumpkin seeds, sesame seeds, chopped brazil nuts, chopped walnuts, chopped almonds.
  • cranberries
  • a handful dark chocolate chopped finely (optional)
  • 1-2 tablespoons of cocoa
  • 1-2 tablespoons of coconut oil (I got mine from the market http://Www.virgincoconutoil.co.nz

Mix all the ingredients together adding more dry ingredients if necessary.  If the mixture is too dry, add a touch of boiling water.  Then roll out into balls and coat in coconut.  To make it easier, I roll them into balls and place them in a container containing about half a cup of coconut. Then I shut the lid and shake gently to coat the bliss balls.  Keep them in the fridge and ENJOY!
