
Reflections
Trying to make the most of the sunny winter days, there’s nothing like a walk in the winter garden or up Parnell Rise. While I was writing yesterday a rainbow came and settled on my hand from the crystal hanging in the window.
It’s lovely to make the most of the winter sunshine.
I don’t as a rule like biscotti but I was keen to try making them all the same. They turned out nothing like the ones I had tried in shops. They were crunchy and divine. Of course the hazelnut praline helped, but the biscuits themselves were delicious.
I first made the hazelnut praline. I put hazelnuts and sugar into a pan over a low heat, until the melted sugar turned to caramel and had coated the nuts. I poured this onto a tray and when it was cool, whizzed it up to a crumb.
I creamed the butter and sugar, added vanilla essence and the hazelnut praline, then the remaining ingredients. The resulting dough was good enough to eat, which I did alot of.
I shaped the biscotti into two long thin loaves and baked in the oven. Then I thinly sliced the loaves and baked the biscotti.
I would definitely make this again. It’s really yummy stored in a jar and ready to eat with a hot cup of tea.
