Its time to bake a cake and this berry delight struck me as delicious.  I had most of the ingredients, but I didn’t have marzipan for the walnut and brown sugar crumb topping which gave the cake a subtle almond taste. This cake had an inordinate amount of berries on top, blueberries, raspberries, blackberries and strawberries… a whole 600grams!!  Speaking of grams, I was in heaven being able to measure my ingredients, 375g flour, 70g of muscovado sugar, has never sounded so sweet, like music to my ears, no google required now that I am home with my electronic kitchen scales on hand.  Phew.  Won’t travel or bake without them!!

Being the school holidays, I had just been to “The Incredibles” with my daughter.  It had been pouring with rain so the perfect thing to do.  Aside from going to two high school musicals this year, (Hairspray and Beauty & the Beast), great productions, I also went to The Globe Theatre to see Macbeth.   The fake bodily fluids flying from the stage were a hoot.  Such fun to participate in and experience life’s entertainments.

So I made the lovely mixture, full of butter, sugar and walnuts, then poured on the fruit, so much fruit.  Then the crumb topping.  I was worried it wasn’t going to cook as the fruit was so thick and dense.  But it just broke down into a thick jam like layer on top of the cake.  It is one of my favourite bakes thus far, (really hard to say that as they have all been so good, ugh) but I found this one really hard not to eat, especially with whipped cream….mmmmmmmmm. 

More cake, more trips to the gym, more muscle 🙂
