On Saturday we went to my brother-in-laws for dinner as my sister-in-law is staying. I usually take a pudding so it was a good excuse for a bake. This marbled mocha cheesecake looked good to share, rich, decadent, and not something I could possibly cope with in the house!! I hauled out the Kahlua which has been in the cupboard for probably several decades, and it was as good as new. I made the biscuit crumb and used some of the digestives I had baked last week for the base., Yum, as well as bought chocolate digestives. I love making cheesecake, but have never really made baked cheesecake so this was a treat.
It wasn’t difficult. Very rich with the addition of melted chocolate to one half of the mixture and coffee and Kahlua to the other half. It was delicious and I probably ate enough of the uncooked mixture to warrant a slice. 🙂
Fortunately I only put in one instead of two teaspoons of coffee, but these mistakes can make for a better result when eating a very rich decadent cake. Yum with cream, it had the texture of chocolate brownie, or chocolate ganache, and went down very well with the family! :).
I love eating chocolate in moderation. In Brazil, one eats chocolate cake for breakfast – you gotta love it. And tbh, chocolate’s not that bad for you, in moderation! Speaking from a Glycemic Index (GI) perspective, dark chocolate has a low GI. GI is the measure of how high and fast a carbohydrate raises your blood sugar. A high GI means your blood sugar rises quickly.
Dark chocolate with a GI of 23, falls into the very low glycemic index category, which means eating dark chocolate won’t make your blood sugar levels peak, and in fact only causes a small and steady rise in blood sugar.
Feel good the next time you eat dark chocolate, it’s almost good for you!! 🙂
