When your life involves writing, reading, editing – everything to do with screen time, let alone social media, having concussion and being told to do nothing for 48 hours is like a prison sentence. I couldn’t watch TV – that’s apparently the worst thing you can do because the blue light is very stimulating for your brain. I couldn’t bake – unless I didn’t have to read a recipe! (well I didn’t read a recipe for the Laissez Faire Cake (Banana, berry and chocolate cake) at least!
I wasn’t even allowed to drive, too stimulating. So I asked the doctor, “Can I paint?” “Well, if it’s just rolling the walls it should be Okay,” he said. So all week I have been painting my daughter’s bedroom -therapeutically mind numbing work, rolling half Spanish White or Apricot Bliss. At least it got the job done!
I also baked, not in the first 48 hours, but still with some symptoms, so I chose a simple recipe, scones.
Lovely recipe. I had never before put an egg into scones and I don’t usually add sugar, but they turned out light and fluffy. The liquid was buttermilk instead of milk. I did misread the recipe, -funny that! I thought you had to pat the dough out to 3mm thick so we ended up with a lot of thin scones, petite, like high tea scones! In fact, the recipe said 3cm, so the next day, given that they had all been eaten in a flurry, I made more, the right depth. Whatever the depth, they tasted amazing with jam and cream.
My scone recipe is still good too Scones, though what I liked about this recipe was the dough wasn’t gooey, and the scones turned out very fluffy with crispy sides. I might add less liquid to my recipe in future and even use buttermilk instead. 🙂
