Well who would have thought I would have got here, half way, the 60th bake out of 120 from The Great British Bake Off, Big Book of Baking!! Phew, long journey, long way to go.  Feels like a marathon, not an unpleasant one though.  I was about to whip up a quick Banana Cake being the beginning of the week and needing some cake for school lunches.  Instead I did a bake, these fairy cakes.  This turned into a luscious sponge mixture, 

equal parts butter and sugar interestingly enough, which beat up to a soft, white mix.  Then I added the eggs and flour and decided to make two flavours, chocolate chip and banana.  They didn’t rise much but could have something to do with running out of self raising flour.  But they tasted delicious, actually more like rich caramelized biscuits than muffins.

 

 

 

I made butter cream to put on top.  All this whipping and mixing of butter sure makes for a beautiful tasting result.

 

 

 

 

It’s spring and very welcome at that.  I recently planted my strawberries in a pot.  Not only are they conveniently placed on the deck, but it looks good.  Can’t wait for the warm weather to kick in.
