So I made Paul’s signature bake, Mini Sausage Plaits.  Well, I have to say, I do love black pudding and the resulting parcels were filled with delicious ingredients, pork sausage, black pudding, mushroom paste and caramelized onions. YUM.  All this inside a flaky pastry plait.  Despite the fact that savoury bakes are not my favourite, I didn’t mind making these as the ingredients were so good.  Who doesn’t love mushrooms on the base of any meat dish and any excuse to make and eat caramelized onions.  I sauteed the mushrooms gently to make a paste.  Then I mixed the pork sausage with chopped black pudding.  I remember eating black pudding in the north of Spain,  a specialty there.  It was practically straight out of the cow! A bit too authentic!!  🙁 

 

I chopped the red onions finely and sauteed them to make lovely soft sweet caramelized onions with sherry vinegar and brown sugar.  These ingredients were all layered onto the pastry and closed in a plait of flaky pastry, then egg washed and covered in sesame seeds and into the oven.  They were so good, I ate quite a few…for dinner 🙂
