I got this recipe from the Real Food in New Zealand private Facebook group.  It is gluten free. They got it from Wholefood Simply.  I have altered it by adding the dried fruit and ginger.  And of course by sprucing it up a bit with the melted dark chocolate and crystallized ginger on top! It’s the sort of recipe you could mix and match your ingredients depending on what you have in the cupboard or like to eat.  Next time I’m going to put chopped apricots in it. YUM.  The ingredients for the recipe are: Ingredients:

  • 4 rounded tablespoons of honey
  • 4 rounded tablespoons of hulled tahini
  • 1 cup of desiccated coconut
  • 1/3 cup sunflower seeds
  • 1/3 cup pumpkin seeds
  • 1/3 cup sesame seeds
  • pinch of salt
  • 1/3 cup cranberries
  • 1/3 cup dried papaya or apricots
  • 1 inch fresh ginger grated
  • 150g dark chocolate melted
  • Crystallised ginger chopped

 

I put all the ingredients into a kitchen Whizz and mixed everything together until broken down.  I added cranberries, chopped dried papaya and grated fresh ginger.  I then pressed the mixture into a lined baking tray and baked in the oven for 15 minutes at 180 degrees C.  When it came out, I cut it into slices while hot and then melted the dark chocolate in a heat proof bowl over boiling water and drizzled this over the slices.  I put sliced crystallized ginger on top. Add whatever you like to it, walnuts, raisins or glazed cherries for example. It was so easy and quick to whip up, and so healthy.  Do Try It! 🙂 Fantastic texture and you know its good for you. 🙂
