I made these for Sunday lunch with a few ingredients I had in the cupboard and fridge. They are full of chickpeas and veges, healthy and good for you. I used almond meal but you could swap if for flour if you don’t need gluten free. The addition of turmeric, garlic and ginger gave them a flavorful zing, while the background of chickpea and tahine was subtle and delicious. To make these fritters, combine all the following ingredients:-Ingredients:
Add all the ingredients to a kitchen whizz:-
- 1/2 cup sesame seeds
- 1 can cooked chickpeas
- 1 cup almond meal (or 1 cup plain flour)
- 2 eggs
- 3 tbsps tahine
- 1 clove garlic crushed
- 1 inch root ginger grated
- 1-2 tsp tumeric powder
- 1 tsp baking powder
- 1 grated zucchini
- 4 grated mushrooms
- salt and pepper
- other veges optional e.g. capsicum chopped
- add a squeeze of lemon juice and freshly chopped coriander for extra zing.
Put all the ingredients into the kitchen whizz and combine until smooth.
Add milk if the mixture seems a bit dry or more flour if it seems too wet.
Spoon into a frying pan covered with a smattering of olive oil and fry until golden brown. Eat with chutney and salad. Delish!! 🙂
