This is a fantastic recipe for this time of year when you have to take a plate to Christmas functions or as a starter for your next BBQ, get together.  It’s super easy and uses everyday ingredients to create a show stopper.

Sickness is a pain, (literally) whether it be a new diagnosis that changes your life or just the dregs of winter catching up. Its important to take plenty of time, just like a good book or a long hot cup of tea, to pamper yourself appropriately sometimes,

so we can sustain ourselves and our loved ones in our busy ever changing lives.  So take time out for a cup of tea, a glass of wine, put your feet up occasionally, and don’t be always running, fire fighting and saving other people.  Look after you.  Now onto the bake which is more of a “combine” than a bake this time. And it involves cheese and crackers, my favourite: The ingredients are:

 

Ingredients for Cheese Log:
  • 250g mild cheese
  • 250g cream cheese
  • some blue cheese to taste (optional)
  • a dash of Worcestershire sauce
  • a sprinkling of paprika

Use any of these optional ingredients:

  • garlic
  • spring onions chopped finely
  • olives chopped finely
  • raisins chopped
  • gherkins chopped finely
  • glazed cherries chopped finely
  • glazed ginger chopped finely

Soften the hard cheese in a microwave (but don’t melt) and add the softened cream cheese.  Mix with a fork until well combined.  Add the Worcestershire sauce and paprika. Chop and add the optional extras.  I like to use gherkins and raisins with cherries for added colour.  It’s really great with olives, spring onions and ginger too.  If you prefer you can divide the mixture in two (as I do) and make two different flavoured logs with different ingredients.  Once you have added the ingredients, wrap in glad-wrap and shape into a log, round or ball.  Set in the fridge, then when firm, roll in chopped walnuts, peanuts or almonds. You can freeze the logs and pull them out and roll in nuts when you need them for that special occasion.
