So Delcious, pastry cases filled with ganache

Fun weekend away with sisters obviously involved a lot of eating and a lot of shopping.  And the eating and the shopping part combined at Matakana Market on Saturday morning.  What a fantastic place to try fresh homemade products.  I bought Puhoi Pantry Date and Apricot Chutney (find them on Facebook).

(I am a sucker for sweet Chutneys, they go so well with everything, including, you guessed it cheese). I bought Amber Rose’s (http://www.wilddelicious.com) Raw Fermented Dill, Lemon, Fennel and Garlic Kraut!  Mmmmm and so good for my gut health, so important these days.  Sauerkraut’s fermentation process produces beneficial probiotics now linked to improvements in immune, cognitive, digestive and endocrine function. Not to mention the handcrafted, organic and fair trade chocolates from http://www.swissbliss.nz So many delicious things to choose from.  My latest bake involved a lot of chocolate.  I made the pastry from butter, icing sugar, cocoa and an egg yolk.

I rolled out the pastry and set it to chill in the fridge for half an hour.  Meanwhile I buttered the bun trays, then rolled out the pastry and used a cookie cutter to make discs and placed them in the tray.  I pricked the bottom of each and placed baking paper and beans into each tart case.  These were blind baked until crisp like shortbread.

I made the ganache by blitzing the chocolate in a food processor then adding nearly boiling cream while it was going.  This melted the chocolate beautifully.  I didn’t have malt so added plain milk powder instead.  I then poured the ganache into the pastry cases and voila, set them to cool and added cream, strawberries and blueberries to this delectable delight.  Very easy eating and a great Christmasy treat 🙂 Here is a similar recipe if you feel inspired http://www.lcbo.com/lcbo/recipe/malted-milk-chocolate-tart/201506064#.XAxM9uLRXb0
