I made this last night. It took only 20 minutes and it’s delicious and healthy. If you are looking for a last minute present (homemade is always better you know, makes it look like you put in more effort!!) or just want another GF healthy treat for Christmas day, this is your answer. I got this idea from a video I watched on https://wickedwellbeing.com/ To make it all you do is

chop up into small pieces a bar of >70% dark chocolate. Place this in a heat proof dish over a pot of simmering water and leave to melt, stirring occasionally. Line a baking dish with baking paper, and pour the melted chocolate into the baking dish, then smooth it out thinly. Cut the pomegranate in half and de-seed by squeezing it over a bowl and then bash the back of it with a spoon to release the seeds. Remove any white pith. Sprinkle the pomegranate seeds over the melted chocolate.

Chop up nuts, any kind of nuts or seeds. I used walnuts and Brazil nuts, but anything festive would do. Sprinkle these over. I also added chopped glazed cherries and coconut. Now pop it in the fridge and leave to set.

Once set, you can break it up into shards and keep it in the fridge or place it in a nice jar to give away as a gift. Put a ribbon on it, and call it done.
