I whipped these up one afternoon as the kids were arriving home after being away camping. I figured some home baking, or food in general would go down a treat. They were easy and delicious with the tart plums in the centre and wholemeal flour making them even healthier. I couldn’t find the recipe on line so will give it to you here.

To make the muffins I heated the oven to 180˚C. I cut the plums in half, removed the stones and cut each half into 6 wedges, then set aside. I put the soft butter, muscovado

sugar and lemon zest into a mixing bowl and beat until light and fluffy. Then added the beaten egg and mixed this in.

I sifted the 2 flours and baking powder into the bowl, poured in the milk and folded everything together with a plastic spatula. I spooned the mixture into the paper cases, and set 3 plum wedges, skin side up, on top so they were almost vertical. Finally I sprinkled the top with demerara sugar and baked in the heated oven for 25 minutes, you know the drill, “until a wooden cocktail stick inserted into the centre of a muffin comes out clean.”

I put them on a wire rack to cool and they did get eaten and they were appreciated by the very tired, dirty and hungry crew that turned up from camping 🙂 I used nectarines as well, but personally found the tartness of the plums tasted better.
