
This year I have decided to save money on coffee purchases. I worked out we may spend triple figures each year buying coffees sometimes daily. Well that’s a lot of money, so I have purchased a Delonghi Expresso machine, using only fly-buys points! Lots of good coffee and savings. Biscotti in a jar for later
This recipe wasn’t hard and neither was the biscotti. Homemade biscotti is quite different to bought biscotti, it doesn’t break your teeth and is very moreish. Here’s a recipe that looks just as good as the one I made https://owlbbaking.com/lemon-biscotti/ To make the biscotti I beat the butter in a mixing bowl until
creamy and soft. I added the sugar, lemon zest and almond essence and beat until fluffy, then gradually added the eggs. Lastly the flour, baking powder and lemon juice. I then pressed it together and shaped it into a long flat rectangle on the baking sheet covered in slithered almonds.

This was baked in the oven for 30 minutes until light golden brown. When it was cool, I transferred the loaf to a chopping board and cut it diagonally into slices. These slices were set on a baking sheet and baked for a further 20 minutes until crisp and dry.
Once out of the oven and cooled on a rack, I drizzled the biscotti with lemon glaze (lemon juice and icing sugar) and voila, ready to eat! 🙂
Drizzling gives it that extra sweet and sour touch. Just yum
