I was peeling the potatoes to make mashed potato.  It’s been a while but the kids and husband love mashed potato and sometimes its just fun to please.  I looked at these potato skins in the sink, all full of fibre and thought they were just too good to go to waste. 

So I washed them and threw them in a bowl with a 1/2 cup of flour, an egg, a sprinkling of baking powder and milk to mix into a soft batter-like consistency.

Oh and of course don’t forget a handful of grated tasty cheese and salt and pepper.  I shallow fried these in olive oil, then kept them in the oven to stay warm. So delicious! 🙂 They were even more popular than the mashed potato!!!
