This was not a hard bake. With only 5 bakes to go, it feels like the end of a marathon and everything is a bit of an effort. I’m trying to grind on and get a second wind because I do still have some quite complicated bakes to do!!! Ahhhhhh. So this was a pleasant treat, a wee treacle tart with just a few ingredients. It’s actually one of those tarts you could whip up at the last minute if you needed a dessert because there are very few ingredients. The filling is just grated apple, lemon zest and juice, homemade breadcrumbs(!!) and golden syrup. It makes a nice textured, a little bit zingy filling and you know it’s good for you because its got apple.

To make the pastry, I added

wholemeal flour, white flour, a pinch of salt and 1/4 tsp of baking powder to the electric whizz. Then a whole lot of chopped up butter and I whizzed this until it resembled fine breadcrumbs. I added 2-3 tablespoons of water and this came together nicely to form a soft dough which I rolled out and lined the 25cm pie dish.

While the pastry cooled in the fridge, (I didn’t have to blind bake it, Alleluia) I heated up the golden syrup, then added grated apple, fresh white or wholemeal breadcrumbs which I had made from stale ciabatta, and the zest and juice of a lemon. Easy!

I poured the filling into the pie casing and trimmed the edges. With the trimmings of pastry I made some flower decorations for the top and used the rest of the pastry to make little cheese empanadas! (any excuse! https://thebakersdozenbakeoff.com/2018/05/21/empanadas-de-queso-cheese-empanadas/

I baked the tart for 30 minutes at 180˚C. It’s sweet but sour and slightly textured filling matched perfectly with the crunchy wholemeal pastry.
