It’s my daughter’s last day of school and she needed a shared lunch. You know what it’s like, they fill up on sweets and unhealthy snacks. Some kind Mum makes her daughter take grapes and you are grateful (no pun intended) while the rest of the kids take cake and chips. Now that’s not really lunch is it!? Today I made these little Pizza snacks for her to take, whipped them up in the morning. They took 20 minutes because I got the puff pastry out the night before to thaw and cut the sheet into rectangles, then laid them out on a greased tray. I put some BBQ sauce or you could use tomato sauce/tomato relish (even better) on the pastry, then covered each with a slice of cheese. In the morning I baked these for 20 minutes at 180 degrees C and then topped them off with sliced sun-dried tomatoes – could use fresh but could go soggy 🙁 , and freshly chopped parsley or basil. For an even quicker version, you could use wholemeal pita bread cut in half and then sliced into squares. You could also use these as a starter for your next BBQ with chopped olives and pesto, or smoked salmon and capers, or even caramelized onions and blue cheese like I made in The 62nd Bake: Pizzettes Mmmmm Delicious.
