Dark Chocolate Cake

It’s time to bake a chocolate cake.  With all this baking believe it or not, we have no baking in the cupboards for school lunches, go figure.  I am spending so much time on my Great British Bake Off Bakes,  I haven’t had time to fill the tins!!!  I got home from my friends book launch tonight and as I ventured over the harbour bridge decided to bake this when I got home. Unfortunately, we had no eggs so will have to do it in the morning. This is our family’s chocolate cake recipe.  My sister acquired it some years ago and we have been using it ever since.  It NEVER fails!!!  And it is so easy, just add all the ingredients to a bowl (more…)

The 54th Bake: Game, Port and Redcurrent Charlotte

A savoury bake it is.  After the last burst of hot sweet rectangular sugaryness, I think a game meat pie sounds like just the ticket.  I went to my local fresh collective and in the game meat department, only found venison, so bought that.  To substitute the required 800g of mixed game meat I bought rump steak, woops, meant to buy chuck steak but never mind.  High end cuts for a slow cooked pie, it’s only my bank account that will suffer! The 53rd Bake: Cherry & Almond Battenberg Cake

Well this looks interesting.  I’ve been looking forward to having a go at a Battenberg Cake, ever since I saw it being made as a technical challenge on the Great British Bake Off. It was first made in 1884 to honour the marriage of Queen Victoria’s granddaughter Princess Victoria to Prince Louis of Battenberg.  It looks hard…Eeeeeeek.  (more…)

The 52nd Bake: Aubergine Parmigiana Crumble

 

It’s about time I did a savoury bake, all this sweetness and cake, I think I need a break.  I found this recipe for Aubergine Crumble, so bought my very expensive ingredients, gosh, Aubergines @$5 each and don’t even get me started on the price of Mozzarella.  Speaking of yum ingredients though, I went to the Food Show in the weekend and had the best time sampling cheese and chocolate, not to mention humus and berry panna cotta.  It was so much fun and I came away inspired by a couple of products…    (more…)

The 49th Bake: Digestives

I will make biscuits.  These digestives look easy.  The ingredients are amazingly healthy, oats, bran, wholemeal flour and then of course comes the brown sugar and loads of butter.  The dough was so soft and held together beautifully enough to roll out and I used the cookie cutter to cut large round biscuits just like the bought digestives.  They were rich, buttery and decadently healthy… (more…)

Pancakes

Master chef are making pancakes and this recipe for pancakes (pikelets as we call them) are a great staple for Sunday lunch with the family around the table.  Fantastically easy and whipped up with ease, they are a delight to eat warm with jam and cream.  This is my mother’s recipe which makes a large quantity  – all the better.  (more…)

The 48th Bake: Ginger and Pear Pudding

 

We had the family, or some of them coming for dinner; my brother, sisters and kids.  Time to bake a pudding.  This ginger and pear pudding looked just the ticket.  I was staying at Mums for the school holidays, and she doesn’t have a set of electronic kitchen scales so I had to pull out all the stops to measure the ingredients.

The 47th Bake: Plaited Rich Saffron Loaf

It’s the school holidays and before we head away to stay with my Mum, I thought I’d whip up some bread.  Not sure if this is really a good idea, but I’m doing it.  This particular loaf is enriched with egg and flavoured with saffron.  I soaked a teaspoon of saffron in warm water for an hour before adding it to the bread mixture.
