Potato skins

I was peeling the potatoes to make mashed potato.  It’s been a while but the kids and husband love mashed potato and sometimes its just fun to please.  I looked at these potato skins in the sink, all full of fibre and thought they were just too good to go Read more…

Plum Sauce

Something for the fridge or pantry that you can whip up in a spare hour. It doesn’t take long, just chop, boil and done!

I love homemade plum sauce and I love making it. Plums are so cheap at the moment, so I bought a bag while I was at the supermarket and voila, had my ingredients all set to go. To make the plum sauce, you simply cut up the plums, take out the pips, then place them in a saucepan with all the ingredients listed below…

Use those beautiful plums…

Mary Berry’s Pavlova

The other day I had people over for dinner and at the last minute I didn’t feel I had enough pudding!!!! Ahhhhhhh. I had watched Mary Berry making a pavlova on TV and had jotted down the recipe on the fridge. SO I whipped it up. This was my first official Pavlova (lets just say my first official “successful” Pav) The recipe seemed pretty fail safe, and it worked a treat.

To translate my scribble that’s:

  • 6 egg whites
  • 365 g caster sugar
  • 1 tsp white wine vinegar
  • 1 tsp corn starch (which she said makes it soft and chewy in the middle)

I beat the egg whites together until they form soft peaks, then beat in

Chocolate Brownie

Last night I made Chocolate Brownie. I tend to do that sometimes, just decide at 9.30pm to bake! Put something in the cupboard. This is a great recipe for that, or for any occasion. It’s so easy and quick. And fortuitously I have been invited to a BBQ this evening and now have something to take. Yay. The recipe is:

  • 200g butter
  • 50g cocoa powder
  • 400g castor sugar (or brown sugar)
  • 1 tsp vanilla essence
  • 5 eggs
  • 100g flour
  • 1 tsp baking powder
  • 200 g dark chocolate chopped

In a large bowl or pot combine the melted butter with the cocoa. Add

I got this idea from a video I watched on https://wickedwellbeing.com/ To make it all you do is

Sweet potato and cheese muffins

These delicious muffins are from Jaime Oliver on Food TV which I watched while making my lemon and raspberry eclairs.  Delicious and healthy, he made them as breakfast muffins, but I think they would be great for any meal.  Sweet potato is full of Vitamin A and Vitamin B, “one of the most healthy veges on the planet.” I added mushrooms, courgette and onion and used cream cheese instead of ricotta as it was what I had in the fridge.  Here is his recipe : (more…)

Cheese Log

This is a fantastic recipe for this time of year when you have to take a plate to Christmas functions or as a starter for your next BBQ, get together.  It’s super easy and uses everyday ingredients to create a show stopper.

Sickness is a pain, (literally) whether it be a new diagnosis that changes your life or just the dregs of winter catching up. Its important to take plenty of time, just like a good book or a long hot cup of tea, to pamper yourself appropriately sometimes,

buy yourself some flowers

so we can sustain ourselves and our loved ones in our busy ever changing lives.  So take time out for a cup of tea, a glass of wine, put your feet up occasionally, and don’t be always running, fire fighting and saving other people.  Look after you.  Now onto the bake which is more of a “combine” than a bake this time. And it involves cheese and crackers, my favourite: The ingredients are:

Chickpea Tahine Fritters

Healthy fritters with Date Relish for lunch

I made these for Sunday lunch with a few ingredients I had in the cupboard and fridge.  They are full of chickpeas and veges, healthy and good for you.  I used almond meal but you could swap if for flour if you don’t need gluten free.  The addition of turmeric, garlic and ginger gave them a flavorful zing, while the background of chickpea and tahine was subtle and delicious.  They went great with my new Date, Olive and Orange relish from http://www.scarecrow.co.nz

To make these fritters, combine all the following ingredients:- (more…)
